Ardenbeg Apple pie
Ingredients:
1.1Kg Apples from Ardenbeg's apple tree
2.Bowlful of blaeberrys from local woods
3.100g + 100g Sugar from bunkhouse storecupboard
4.225g Plain flour from local Co-op
5.175g chilled butter from local Co-op
Method:
1.Preheat the oven to 190 C or gas mark 5
2.Peel, core & slice the apples and put them in a pan with 100g sugar and 3 tablespoons water. Part cover and cook for 5 mins then uncover and cook for 5 more minutes until the apples go a bit mushy. Put into an oven proof dish with blaeberrys (or wild raspberrys if visiting in the summer).
3.For the topping simply mix the flour and butter using rub in method to create breadcrumb like mixture and then stir in 100g sugar.
4.Place the crumb mixture on top of the fruit, sprinkle on some more sugar if desired and pop in the oven for approx 14 mins until the top is crisp and golden brown.
5.Enjoy as desert, maybe down by the bonfire in the garden!
